Venison Jerky - 1
Probably the best cut for making jerky is the bottom round. Unfortunately, that is also a nice cut for stewing or roasting. Sometimes, I'll save a shoulder roast for jerky. Scrap pieces work, but it's a little more effort. If hunting season is fast approaching, search the freezer for excess roasts. The meat pictured was a shoulder roast that was marked as jerky meat.
