Step 1: Chest hide
At this point I like to turn the animal around so its shoulders are elevated. Continue cutting the hide from the sternum to the neck. If your animal is to be mounted, stop before you get to the neck, preferably half-way or 2/3 up the chest. You need to preserve enough hide for a good mount.
