Making burgers from venison can be tricky, but with proper preparation, you can have a sandwich that is moist and packed with flavor. Venison is very lean so it's easy to over-cook. Sometimes I add 20% beef which prevents the patties from falling apart while cooking. During grilling the added fat drips onto the hot coals, producing a nice smoky taste. The best way to thaw wild game is to place it on the counter for several hours, or in the refrigerator for a day.
